Feel the tannins

•destruction or modification of tannins with time plays an important role in the ripening of fruit and the aging of wine
•prevent oxidation in aging wine
•suppressed production of the peptide responsible for hardening arteries
•bine and precipitate protein

Jack taught me the proper way of drinking wine =)
The way of pouring wine, follow by swirling the wine, smell it, swirl again and taste it..
the purpose of swirling is to allow more oxygen to diffuse into the wine..so that you can sense the stronger aroma of the wine
and when you sip the wine into your mouth
dont swallow it first..
slowly open a small hole between your lips to allow oxygen in..
after doin it a few times, then swallow it
If you can feel the spice spreading, it is,a good wine ;)
